Josh, we have lots of vegan options. Enclosed is an allergen chart, but the following are vegan:
Cilantro Lime Rice, Brown Rice
Black and Pinto Beans
Fajita Veggies
Primavera Veggies
Our potatoes are fried in the same oil that our battered fish are fried in so may come into contact with fish
All of our salsas are vegan as is our Tomato Vinaigrette.
As you probably know, you can substitute dairy for guac and our guac is Vegan.
Our Pesto and Veggie Green Chile are also Vegan.
The Veggie Medley we use for breakfast Is vegan, too.
All of our Tortillas and Chips are vegan, too.
NOT vegan: Potatoes, and the obvious

Just a heads up, I went to the Illegal Pete's in Denver yesterday, and they informed me that the Fajita and Primavera Veggeis both contain honey. They also said that the pesto and green chili is not vegan either. Not sure if these changes apply to the Boulder location also, but I would double check.
